The great chefs keep their culinary secrets to a tight circle. Now Benjamin has named a wine after the great Barossa Valley secret which is Mataro. This is the ‘butter’ for all red wine dishes and is used to thicken out the back palate.
Time then to offer a few as 100% varietals so perhaps you can do some blending tricks with other wines at the dining table.
The two heritage varieties Grenache and Mataro are steadily gaining respect as the small circle of drinkers grows. In this case the other Magic Bullet is having in-house bottling so we can offer small quantities of rare and interesting wines. 2020 was the last of the tiny drought vintages which of course suits Mataro.
Recall that varieties from the Barossa Valley are Barossa first and variety second as the flavours from warm climate tend to swamp the varietal flavours.
