The favourite International variety is Cabernet Sauvignon and this is because the wines from Bordeaux, France, which are made from Cabernet are considered the best in the World. Very little was grown in Australia until the 1980s because until the table wine awakening of the 1950s there was simply not the demand for dry, red table wines.
Importation of the reds of Bordeaux dates back to the 1860s since those who wished to drink table wine turned to imports. Since Cabernet was scarce Shiraz was used to make table wines though blends of Shiraz with Cabernet date to the 1940s. This old tradition is worth keeping alive and this Hopcroft and Cornock is our version of this traditional Australian style.
