The flavours of wine are produced by the climate and weather, plus the grower and the winemaker. In this case good grapes from a favourable vintage were taken by the winemaker who used traditional fermentation methods then allowed extended post- fermentation skin contact of 10 days. This is a risky procedure as microbial spoilage can take over so great care is needed. This technique, and others he uses, have imparted additional palate complexity and length to the Sultan.

These methods are not used by large wineries as they are risky, time consuming, and thus use up winery equipment at a busy time. This, of course, is the reason Glug looks for wines made without the pressure and compromises which rush the grapes through the winery and alters flavour development.

We also bottled another Mataro in the Harem range, 'Shazada', which is different though equally as good, and part of the difference comes from this winemaker having his ideas.
