Making wine in the Barossa Valley means placing on display what you do with the three heritage red varieties that make up this Goat Square GSM.
The great fame of the Barossa Valley is built around Shiraz as the summer heat, often intense during the ripening cycle, is built into the wines which gain a deep mid-palate so intense it can appear sweet.
The other two varieties also develop remarkable flavours during the summer heat though in ways that are not so bountiful. While acceptance for Grenache and Mataro grows it is steady, as the flavours do not have the instant appeal of Shiraz and lets say respond better to the advanced consumers.
It has been known since the 1950s that the best way to display Grenache and Mataro is to blend them and then add the mid palate addition that comes with the Shiraz. Sixty years on from the 1950s has bought considerable refinement and a wine such as this Goat Square is todays state of the art and a very fine drink.
